Tahini and Tiger nut Protein Bread (vegan, gluten & grain free)


Ingredients:

  • 1/4 cup tiger nut flour

  • 2 T of vanilla or chocolate protein powder

  • 2 t of cinnamon

  • 1/2 t baking soda

  • 1/2 t baking powder

  • 1 t vanilla

  • 2 t apple cider vinegar

  • 1/2 C of coconut or almond yogurt

  • 1 cup tahini

  • 2 flax or chia eggs (2 T of ground flaxseeds or chia seeds mixed

  • with 6 T of water)

  • 2 T of maple/date/coconut syrup

  1. Preheat the oven at 175 C and line a medium bread loaf tin with

  2. parchment paper.

  3. Prepare the flax/chia eggs and set aside in a small bowl.

  4. Next, in another small bowl or cup whisk together the yogurt with the apple cider vinegar.

  5. In a large mixing bowl, place the flour, protein powder, cinnamon, baking powder and baking soda mixing to combine.

  6. Then, whisk together the yogurt with the eggs mixture until well incorporated and add the rest of the wet ingredients (maple and vanilla extract).

  7. Pour the wet into the dry and mix throughly.

  8. Transfer the batter into the prepared loaf tin and bake for about 20-25 minutes until toothpick comes out dry.

  9. Let cool for 10-15 minutes before slicing.

  10. Enjoy topped with nut butter, tahini, more yogurt and maybe a sprinkle of nuts and seeds and a drizzle of syrup or chocolate sauce!
