Raw Coconut & Walnut Porridge

  • 1 cup of  coconut chips

  • 1/2 cup of  walnuts, ground

  • 1/2 cup of  dates

  • 2 tbsp of  coconut flour

  • 2 tsp of  ground cinnamon

  • 2 tsp of  vanilla powder

  • 1/2 tsp of  ground cloves

  • 1/2 tsp of  ground nutmeg

  • 1 tbsp of  lucuma powder

  • 1 tbsp of  ground flaxseeds

  1. Place the coconut chips along with ground walnuts, coconut flour, spices, lucuma and ground flax seeds in a food processor and pulse until combined and the chips are broken down in smaller pieces.

  2. Add the dates and process until they're throughly mixed in.

  3. Transfer to a serving bowl and top with dried berries and other fruit, cacao nibs and some dairy free milk.

  4. Optional if you like your porridge sweeter, add some people syrup either in the mix or drizzled on top. Enjoy cold or slightly warm!

Store in an airtight container in the fridge she for 2-3 days.
