Ingredients:

Donuts

  • 1/2 cup almond/tiger nut flour 

  • 1/4 cup tapioca starch

  • 1/4 cup of vanilla plant based protein (works well with a blend that 

  • has a smooth texture)

  • 2 tbsp lucuma powder (optional but adds a subtle caramel flavour)

  • 1 tsp cinnamon

  • 1 tsp vanilla powder

  • 1/4 tsp of salt

  • 2 1/2 tsp baking powder

  • 2 tbsp flax meal/ground chia seeds

  • 1/2 cup coconut sugar

  • 1/2 cup coconut or other non-dairy yogurt (it works better with ones 

  • that have a thicker consistency)

  • 1/4 cup + 2 tbsp coconut or other non-dairy milk 

  • 3 tbsp melted coconut oil

Frosting

  • 1/2 cup coconut yogurt

  • 1/4 cup melted coconut butter

  • a few drops of stevia (optional)

  • beetroot and turmeric powders

For the donuts

Makes 8-10 cookies

Ingredients:

  • 100 g of desiccated coconut or cashews

  • 120 g of tiger nut flour or buckwheat/coconut flour (if using coconut flour increase the amount liquid, add about 2-3 tbsp of desired plant milk)

  • 35 g of sesame seeds

  • 150 g of maple/date/coconut syrup

  • 1 tsp of vanilla extract

  • 1 tbsp of mixed greens powder or moringa/wheatgrass/barleygrass powder

  • 1 tbsp of matcha powder

  • 1 tbsp lucuma powder (optional)

  • pinch of salt

  • zest of one orange or lemon about

  • 100g of sprouted buckwheat

  • 50 g of golden berries (or a mix of raisins and golden berries, dried mulberries)

  1. Place the coconut/cashews in a foods processor and process until ground to a fine consistency.

  2. Add the rest of the dry ingredients except the buckwheat. Pulse again to combine.

  3. Transfer to a mixing bowl and add the sprouted buckwheat and maple syrup mixing with your hands until the dough sticks together. Add 2 or 3 tablespoons of almond or coco...

Ingredients:

  • 1 1/2 cup of tiger nut flakes (use buckwheat flakes or rolled oats as well if you don’t have these on hand)

  • 1/2 cup of sesame seeds

  • 1/4 cup of pumpkin seeds

  • 1/4 cup of hemp seeds

  • 1 tsp of vanilla extract or powder

  • 1 1/2 tsp of cinnamon

  • 1 tsp of ground cardamom

  • 1/2 tsp of salt

  • 1/4 cup of cacao or carob powder (I used a blend of carob, cacao, beetroot, vanilla powders)

  • 1 Tbl of maca or lucuma powder

  •  2 Tbl of vanilla/ cacao plant based protein powder (optional but I loved the flavour it added and a bit of extra added nutrition)

  • 1/4 cup of tahini

  • 1/4 cup of maple/coconut/date syrup or other liquid sweetener of choice (I made a paste using juicy dried apricots and blending 1/2 C with 1 C of water)

  • 1/4 cup of raisins/sultanas/dried cherries

  • 1/4 cup of goji berries

  • 1/4 cup of cacao nibs (could use chocolate chips as well)
